[81] Vegetable Stock

Okay, this is very easy and quick to write up. It’s so quick that I’m putting it all right here.

Also, I should tell you this: I didn’t follow this recipe on purpose. It’s just what I do to make stocks of all kinds, in general. However, when I went to got make turkey stock this year, I found I’d saved so many veggie bits in the freezer that I didn’t have room for the turkey carcass. So I made veggie stock and had another recipe. WOO!

h2. Ingredients

The cleaned skins and peels from veggies such as onions, carrots and potatoes. The tops and bottoms of these veggies too. Other veggies that are limp, but otherwise alright can go in there as well. Avoid strongly flavored stuff; cauliflower, broccoli, etc.… Continue reading →

[60] The Pumpkin Tureen

When I saw this recipe’s title, I was curious. When I read the recipe, I had to make it. It’s soup. BAKED IN A PUMPKIN!

Seriously, as I think regular readers of this blog will know, I have been itching to make this recipe since the moment I laid eyes on it. Admittedly, I haven’t gone on and on about it, but at least two posts (maybe even three) mention that I’m planning to make it “soon”. It took awhile, but I managed.

[59] Creamy Butternut Squash

I love butternut squash. I don’t think I had it a lot as a kid, but I definitely had it some. Mostly, my mother would cut one in half and put a little butter and brown sugar in the cavity and bake it until it was soft and delicious. In fact, I don’t think I had it any other way until years after I started making it at home. Of course, over time that sort of preparation makes you wonder if you’re having a veggie or a dessert, so I started looking for other ways to make it. Mostly, I found soups. I like them, but I still wanted something else.

[1] Whole-Grain Griddle Cakes

Joy of Cooking

We have a funny way of making pancakes in this house. Namely: we don’t have a big griddle to make them on, so they come off the pan one or two at a time. This leads to eating in the kitchen while waiting for the next one to come off the pan. We’ll also alternate who makes each one so that the other can enjoy theirs while it is hot.

As far as heat is concerned, let the pan get hot over a medium heat. Add your butter (what else?), add the batter, and wait until you see bubbles popping and not closing back up. Flip the pancake, then turn the heat off. Repeat a lot.
