Second week CSA

A tiny amount of turnips and broccoli again this week! We also got two kinds of lettuce (and I might be starting to be able to identify at least the New Red Fire varietal) and early strawberries! The e-mail from the folks on the farm says that early strawberries tend to be significantly less sweet, so they’re ideal for making jams and preserves. If we’d gotten more of them, I’d be all over that, just to see if a friend who always finds strawberry jam too sweet would like early strawberry jam.

[9] Pork Tacos with Roasted Green Onions

Since we made the Barbecued Pulled Pork from this cookbook yesterday, today was the day to see how good the premise of the book holds up. Thus, pork tacos!

I won’t say I was blown away with this recipe. However, it was super easy to make, so I’ll accept that this wasn’t really cooking (to make the “Cook Once, Eat Twice” name stick). It kind of reminds me of those nights that you want to eat what’s in the house, but you’ve just got a bunch of leftovers around. “Man, I don’t want another pork sandwich. How about… putting it in a tortilla and calling it a taco?”

Ingredients

8 green onions, trimmed
2 teaspoons olive oil
Salt
8 soft corn tortillas
2 c pork from Barbecued Pulled Pork, reheated

The New Enchanted Broccoli Forest

Another that Natasha brought in. I was dubious at first due to the goofy fonts and layout, but it’s a cute book, and at least some of the dishes we’ve made from it have been good. It’s a source of nice healthy vegetarian food.

Note, we have the second edition (linked with the picture), but the third edition (The New Enchanted Broccoli Forest)
is probably what you want if you buy a copy. Our 1995 one is nice and cheap used though!

Interestingly, this isn’t the only “Cook Once Eat Twice”. We actually expected to be getting Cook Once, Eat Twice Slow Cooker Recipes, published in 2006. Instead we received the book linked above, Cook Once Eat Twice Recipes (Favorite Brand Name Recipes). Whups! That was our fault in not buying the right book, not Amazon’s fault in sending us the wrong thing. We didn’t know about this mixup until we started to write this blog entry. Angelique, if you’re reading this, now you know what Natasha’s confusion about the book is 🙂

[8] Slow Cooker BBQ Pulled Pork Sandwiches

Cook Once Eat Twice Recipes

Oh my goodness, this recipe made a lot of food. That is, of course, part of the point of the first recipe in a pair out of Cook Once Eat Twice, it’s supposed to make enough of the major component of two recipes for four people to eat twice. Even so, I was startled at how much pork we had leftover. I did try to recruit visitors for this evening to come help eat all the food this was supposed to make, but no dice. Which is sort of a shame, because we had way more than “eat twice”, but that said, we’ll have decent leftovers one day as well. And that helps, especially with a move coming up.

All in all, I think we got effectively three dinners out of this recipe (two lunches for me and two dinners for the two of us), as well as leftovers for the freezer.… Continue reading →
