Food While Traveling

Almost two years ago, I made a goal of cooking in more while traveling.

As I mention in the linked post, Bill and I figured out pretty quickly that we’re both fairly happy with several breakfasts in a row of just yogurt, fruit, and granola. It’s fast, simple, and tasty. We almost always, at this point, stop at a grocery store and get enough for at least two breakfasts “at home.” We could do more, and I think we both want to do more, but there’s always more folks who want to go out and places we want to try. So, we want to do more, but we also want to keep it as it is. Always a conflict, I suppose.

Meeting Bill’s Family in Seattle, WA.

After Salt Lake City, Bill and I hit the road again. Well, the contrails or something. We flew, is what I mean. Flew from Salt Lake City to Seattle, WA. While there, we saw a ton of friends. We made new friends. I got to meet some of Bill’s extended family for the first time. That was super awesome because Bill’s aunt makes an amazing dinner. You all? You’re disappointed you didn’t get to eat with us.

This is actually something Bill’s Uncle Russ made. The morning of our arrival, he and Bill’s cousin Jack went down to some place in Seattle where you buy fishes and bought two big salmon. Turkey Enchiladas

One of the things that prompted the start of this blog, back in 2010, was the fact that Bill and I bought a CSA share. Basically, we realized we’d occasionally get more food than we knew how to handle, as well as the occasional food item we couldn’t even identify.

What we didn’t know, that first year, was that our farmer had spent some time in our home state of New Mexico and so also had a taste for some of the foods we grew up on. So, we were delighted to see (and smell!) some Anaheim peppers in one of our boxes way back then.

The truth is that we’re always thrilled to see Anaheims in the box. Even now, into our third year with Tomato Mountain, the things that are so like New Mexico green chiles make us smile.… Continue reading →

[5] Slow-Roasted Salmon with Yogurt and Cardamom

Big City Cooking

As you can probably imagine, right now a lot of our meals start with, “What do we have in the house?” and “What recipes do we have in cookbooks?” This was particularly hard until 2 June 2010 (when we made this dish) because we had been holding off on buying very much food until our first CSA share arrived. We purchased a few things at one of the city’s farmers’ markets two days before the share arrived to supplement what we already had, but that was it.

This salmon dish was the first recipe we made after going out for groceries. I was rather hesitant about it, but it turned out fairly well. The best part? Having leftover salmon to top salads with the next day!… Continue reading →
