Things we made this weekend & I forgot to take pictures of.

I make myself really busy sometimes. So much so that I forget how nice it is to just be at home. Which means that, when I finally am home, I end up doing one or both of two things. Most likely, I stop and do a lot of quiet hanging out with Bill and a lot of reading. Or I cook a lot.

This weekend was a long one for Bill, and a quiet one. We ran just a few errands, had a very nice meal out, learned about a bocce ball league, had a guest over, and I read a lot. And then I cooked everything. We also played a bunch of games.

[124] Pioneer Woman’s Mac and Cheese

So. I made this a long time ago. Looks like about 10 months ago, to be exact. I had forgotten I’d made it. When I looked at the sidebar or “Upcoming Recipes”, I was just sure I’d have to let the “Macaroni and Cheese” go, because I didn’t have the foggiest notion where I’d gotten the recipe.

Then, my habit of photographing the cookbooks with the ingredients saved me. I found the photos of the “Macaroni and Cheese” and was saved. Saved, I tell you! I could report the recipe to you (and thus count it in my totals1). Hooray.

[123] Spaghetti with Clams

We actually made this recipe from Cooking for Two way back in February. At least, that’s what the date stamp on the photos say.

I don’t remember much about it. Other than enjoying it, I recall we had a moment or two of wondering if the clams were going to kill us. I don’t, however, remember why. Maybe typing it up will remind me. I hope so, or I’m going to panic making it a second time, and that won’t do.

Having rediscovered it, I think I am likely to make it again soon. Though, do clams have a “season” the way salmon and swordfish do? I don’t think so, but if they do, it might have to wait.

Boo to that. I like clams. I especially like that Seafood Watch says they’re never worse than a “best choice” “good alternative”.Continue reading →

Smitten Kitchen’s Naked Tomato Sauce

I have told you all in the past how much I didn’t like tomatoes. I liked ’em ok in sauce, ketchup and, you know, things like that. Cooked, let’s say. Then Corrine and an unknown farmer came into my live & bulldozed that into oblivion. You all know that.

Now I really like tomatoes, in season. I still kind of find winter tomatoes repulsive. So now, possibly more than any other food in the world, I’m vaguely obsessed with finding a way to preserve this for the future. Of course, I’m pretty new at this “preserving things”, so it’s going slowly.

The other day I managed to can a dozen pint jars of tomatoes. I don’t know if that’s a reasonable size or not, but I decided it seemed better than quarts for a family of two.… Continue reading →

Surprise! Dinner was delicious!

Tonight’s dinner was supposed to be vegetable risotto. I was still just going to throw it together, but I had PLANS.

However, Bill worked late and is about to go work some more. So risotto wasn’t going to happen, because it was going to take too damn long.

So, on the train ride home, I started trying to figure out some faster meal. The worst case scenario, in my head, was that we ate out. We have too many veggies in the house for that to work for me at all. We’ve been inundated by tomatoes, you see.

My train thought process went about like this (truly – all crazy thoughts included):
