Another repeat – Pork Shoulder with Chipotle-Orange BBQ Sauce

In the realm of “repeating delicious recipes”, yesterday, as part of our hog share, Bill & I repeated the pork shoulder in chipotle-orange bbq sauce. I’d actually been looking forward to making this again, ever since I gave away all the leftovers & so thoroughly disappointed Mr. Bill.

Too bad it didn’t come out nearly as well this time. Bill’s willing to eat the leftovers, but he’s not as thrilled.

So, what changed?

There were two major things, that I can see. First, the sauce was far more fluid this time than last time. We both agreed it was nearly a glaze last time, and this time it was a fairly thin sauce. There was a lot more of it – it didn’t reduce as thoroughly.… Continue reading →

We made this one for a party. I’m not sure if I was prompted by a Whole Foods sale on pork shoulder, a cut I am loving more and more and more. My friend Dylan tells me it’s commonly turned into sausage, do to its ratio of fat:meat. I say, “What a waste!” This is good for so many other things!

I have a slightly tilted photo there. No idea why.

Anyway, as you can see, there’s a lot of good stuff going on in that photo. Aside from a nice cut of meat, the oranges, green onions & chipotles!

Bayless’s recipe this week.

Okay, if you count what’s between the quotation marks, you’ll find that it’s 140 characters long. Obviously, there’s enough there to get a sense of what is supposed to be going on, but is there actually enough there for a total beginner at grilling and ribs to make dinner? And, given the quantity of baby back ribs there, is there enough going on that a total beginner can make it for dinner WITH COMPANY?

Somehow, I suspect that wasn’t entirely Rick Bayless’s intent, but I do hope he gives some points for optimism. However, given the cookbook giveaway is for “Fiesta at Rick’s”, maybe it was his intent, and I played right into his sneaky hands!… Continue reading →
